Shepherd’s Pie Potato Skins

Ingredients
For the Potato Skins:
- 6 large russet potatoes
- 1 tbsp olive oil
- 2 tbsp butter
- 2 tbsp milk
- Salt and pepper
For the Filling:
- 1 lb ground beef
- 1 medium onion
- 2 carrots
- 2 cloves garlic
- 1 cup frozen peas and/or corn
- 1 tbsp tomato paste
- 1 cup broth
- 1 tsp Worcestershire sauce
Instructions
Prepare the Potato Skins: Preheat your oven to 400°F. Bake the potatoes until cooked, about 45 minutes. Scoop out the flesh of halved, baked potatoes to create skins, and set aside to make the mashed potatoes. Brush the skins with olive oil, season with salt and pepper, and bake until crisp.
Mash the Potato: Mash the reserved potato with butter and milk. Set aside.
Cook the Filling: Sauté ground meat, onion, carrots, and garlic until meat is browned. Stir in peas and/or corn, tomato paste, broth, and Worcestershire sauce, simmering until thickened.
Assemble and Bake: Spoon the meat mixture into each potato skin, top with mashed potatoes, and bake until the tops are golden.
Serve: Let cool slightly before serving. Enjoy these innovative Shepherd's Pie Potato Skins as a delightful snack or appetizer that packs all the flavors of the classic dish in a single bite.
